Control Systems | Hospitality and Tourism Management Accounting
Cathy Ralston is the co-ordinator for the Oxford-Brookes University exchange in England and the HAFA portion of the Mexico exchange with ITESM. She is also actively involved in awards, both as chair of the HAFA Awards Committee and on the Senate Awards Committee. Cathy teaches cost control and management accounting courses and has integrated computer applications into these courses. Her research interests are in production planning and control with an emphasis in commissary operations as well as texture modified foods for dysphasia patients. Cathy is a member of the Dietitians of Canada (formerly the Canadian Dietetic Association) and has had varied experience in hospital foodservice management.

Introduction to Hospitality and Tourism Management
Jim Pickworth is the School's Undergraduate Co-ordinator and is responsible for the School's Co-op program. He teaches the introductory hospitality management and operations analysis courses. His research has focused primarily on productivity measurement and improvement. Besides writing case studies, Jim has published articles in various journals on topics relating to managerial responsibility, service delivery systems and human resources practices in the hospitality industry. He has been involved in management development in the UK and was an Area Operations Analyst for Hilton International.

Stephan Gröschl has worked in a wide range of hospitality and tourism organisations in Germany and the United Kingdom. He holds a MSc in International Hotel Management, a CertHEd, and a PhD from Oxford Brookes University, United Kingdom. Dr. Gröschl has taught undergraduate and graduate students as a part-time Lecturer in the School of Hotel and Restaurant Management at Oxford Brookes University, United Kingdom, and as a tenure track Assistant Professor in the School of Hospitality and Tourism Management at the University of Guelph, Canada. Areas of teaching include human resources management and organisational behaviour. Dr. Gröschl's research focuses on international human resources management, diversity management, and cross-cultural management. He has published in a variety of international journals such as the 'Journal of Human Resource Management in Hospitality and Tourism Management', 'Tourism and Hospitality Research', 'International Journal of Hospitality and Tourism Administration', and 'International Journal of Contemporary Hospitality Management'. Dr. Gröschl has been a member of a variety of international academic institutions and professional associations including 'International Council on Hotel, Restaurant, and Institutional Education', 'European Group of Organisational Studies', and 'Human Resources Professionals Association of Ontario'.

Introduction to Canadian Business Management

Don MacLaurin joined the HTM faculty in January, 1991. He has taught courses in the areas of foodservice, lodging, tourism and convention management. Don previously worked for Hyatt hotels, British Airways, Tourism Canada, a restaurant corporation and several tour and travel companies. He is currently involved in research projects with the Professional Convention Management Association and recently authored a textbook for Meeting Planners International, an association of meetings industry professionals. Don is also involved in representing the School externally and is currently President of Canada CHRIE, the international association of hospitality educators.

Organizational Design

Geoff Smith joined the School of Hospitality & Tourism Management in 1998 and teaches courses in Human Resources Management, Organizational Behaviour and Managerial Skills. Delivery of a number of these courses is offered both in the classroom and through distance education.
Geoff's research, in the field of Prior Learning Assessment and Recognition (PLAR), seeks to recognize, evaluate, and give credit for, the prior learning experience of mature individuals that may wish to return to university in order to acquire new skills.
Geoff has a business background that spans over thirty years and includes senior positions in human resources at Compass Canada Limited, Adidas Limited and Marks and Spencer.
